David's Soundview Catering won its second straight Chef's Challenge during the Stamford Museum and Nature Center's Maple Sugar Festival Saturday. The four year old event pits local chefs against each other to see who can put the best spin on food using maple syrup.
Dishes included a maple syrup duck slider and white cheddar grits and shrimp -- the winning dish.
David's joined EOS Greek Cuisine, Festivities Catering and Bar Rosso in using the sweet ingredient
"It brings out the flavor a little bit more," says EOS owner Nikki Glekas about maple syrup. "So maybe you'll add less sugar to a recipe because the maple syrup is already sweet."
"It has the same component to making things richer and deepen the flavor a lot," says Erik Anderson, executive chef at David's Soundview Catering.
OmNomCT food blogger Kristien Del Ferraro has attended the challenge every year.
"What's nice is it's always a bit unexpected," she says about the maple syrup flavor. "It's always this sort of mix between savory and sweet that I happen to be a big fan of."
The Maple Sugar Festival continues Sunday, 11 am to 3 pm.
