Chef Pietro Scotti of Da Pietro's shares a diner's favorite

Restaurant week is nearing its end in Westport, but there's still a few days left to eat out at big discount.

Today, we went inside the kitchen of one participating restaurant: Da Pietro's on Saugatuck Avenue.

"I'm making ravioli," said Chef Pietro.

Chef Pietro Scotti is using a machine to thin his home made pasta.

 "It's like a scarf," he said.

His ravioli will be filled with chick pea mouse and be served with a cream sauce. 

"So, now I show you how I fill my ravioli," he said.

Taking his now thinned pasta, he stretches it across this table.

"So, we take it around this way and now this way," he explain.

He then sprays the pasta with some water….

"We want it to stick you know what I mean," he said.

And now its time for the filling….

A mixture of truffle with ricotta and parmesian cheeses, all locally bough and locally farmed.

My ricotta is fresh made. The eggs are from my chickens.

This is just one of Pietro's most popular dishes, and until October 19th you can still get a taste at a discount.
